Coffee Facts, Tips and the Roasting Process
The Leelanau Coffee Roasting Company uses only the highest grades of Arabica coffees. All of our decaf coffees use Swiss Water Process decaffeination.

Coffee should be brewed and enjoyed as quickly as possible from the time it leaves the roaster.

Freeze the beans in an air-tight container to keep them fresh. Freezing slows down the out-gassing process that leaves coffee stale.

Coffee stays fresh longer if it isn't ground. The more surface area exposed to oxygen, the more the bean can out-gas and lose flavor.
We use only the highest grades of Arabica Coffees, and we roast them in a superior hot-air bed roaster which gives us an exceptionally clean and complete roast. We roast only what we can sell or ship, which ensures that our beans are out-of-the-roaster fresh. Plus, what we don't immediately sell or ship, we freeze; just like you should at home.

Our roaster is also unique from the standpoint of "roast integrity". We can stop our roasting process on a dime, which ensures that our French Roast is consistent, and each bean is cleanly developed. At our Glen Arbor Roasting Room, we roast our coffees in four degrees of darkness: Full City Roast, Vienna Roast, French Roast and Italian Roast.

Coffee Types

Arabica (Ah-ra-bi-CAH) coffees are grown in higher elevations, develop more slowly, and have a much more pronounced coffee character. Their coffee cherries are picked by hand, and because the cherries grow in clusters where some are ripe, and some are not, only the ripe ones are harvested. Arabica coffees are graded at the nation of origin. They are graded for uniformity and size. Some countries may have as many as five or six grades of Arabica coffees at terminal. For example, the highest grade of Colombian arabica coffee is called Supremo, the next highest is called Excelso, and so forth.

Robusta (Ro-bus-tah) coffees grow in lower elevations primarily on the central African plateau. These coffees are easily harvested, where the cherries are stripped from the branch whether they are ripe or not, twigs leaves and all. They are then vacuumed off the grounds, and processed. Robusta coffees have a rubbery, flat and punky character and are used as commercial-grade coffees for large industrial roasters. Robusta coffees are sometimes blended with low-grade "Arabica Coffees." We never use Robusta coffees or blend them with Arabica. Why? Because we want to bring you the finest cup of coffee possible.

Decaffeinated Coffee is decaffeinated primarily one of two ways. The most common method, the chemical process, uses Methaline Chloride to chemically alter the caffeine molecule so that the body doesn't recognize it as caffeine. The chemical process leaves coffee with an unsavory tangy metallic bite. The Swiss Water Process utilizes pressurized water, which brings all of the solubles out of the green coffee bean and leaves a chemically inert bean. The left-over water is then refined, with the different elements settling out at different rates. The caffeine is then skimmed off. The water is then added to the vat of the beans and they reanimate. The Swiss Water Process receives its name by virtue of its origin and where the bulk of it is done. Leelanau Coffee always uses the Swiss Water Process of decaffeination.
